Z's WANNABE MAC & CHEESE SNACK

Ingredients-
EXTRA SHARP cheddar cheese brick (I use Kraft..says lactose free and zero carbs..)(okay sometimes..) 
ORGANIC unsweeteened COCONUT SHREDS container(was in refrigerated section by dry fruit/nuts/wheat germ)

1) Take shredder/grater and shred half cup of cheese(or amount desired)
2) Put cheese in small bowl. Add half cup of coconut shreds(or amount desired)
3) Gently mix and ENJOY with spoon like mac n cheese:)


Note:  Finlandia Cheese has LACTOSE FREE Swiss, Muenster, & Gouda!  check out their website for info.

Frozen Grapes

Frozen grapes taste amazing & are a perfect snack!  Love the texture, taste, & temperature:)  Just wash, put in freezer safe container, & freeze.  They should be ready to snack on in a couple hours or for whenever.

Z's COCONUT CHICKEN POTLUCK

Z's Coconut Chicken Potluck

Ingredients-
2-3 peeled/gutted cucumbers (washed, cut in small pieces)
7 or more stalks of celery (ends removed, washed, diced)
1 lb or more natural chicken breasts, cut off fat (baked, then cut in small pieces)
1-2 cans of unsweetened regular coconut milk
half bunch (or more) of green onions (washed, diced)
salt
juice from 1-2 small to medium organic lemons

1) Bake chicken in oven that's been preheated to 350 degrees F about 22 minutes (I use thin sliced chicken breasts)
2) Heat coconut milk, lemon juice, green onions in pot or big stir fry pan on low to medium heat
3) Add desired amount of salt (taste to see.. I use a lot:))
4) Once soup part warm/hot remove from heat
5) Add chopped up chicken, celery, and cucumber to the coconut milk mixture, see if needs more salt or just salt in serving bowl
6) Enjoy! I like it warm room temp and cold..It gets thick once it's been cooled/in fridge...

Note: You could also mix in some spinach cold/raw or sauteed in a little coconut oil...

Z's RAZ-BLUE BREAD PIE









Z's Raz-Blue Bread Pie






Ingredients-
6 Tablespoons raw coconut flour (pure unsweetened) (used coconut secret brand)
3 large eggs
1/4 cup organic ghee (used purity farms) melted
1/4 teaspoon salt
3/4 cup fresh raspberries (more or less as desired)
1/2 cup fresh blueberries (more or less as desired)

Preheat oven to 325 degrees F. Grease 9.5 inch glass pie dish with dab of ghee.
(Add all ingredients except fruit in food processor if it's easier for you than mixing by hand.)
1) Beat eggs and salt together well in medium to large bowl. 
2) Add melted ghee and mix well.
2) Add coconut flour and mix very well.
3) Add fresh fruit gently folding in and mixing.
4) Pour/scoop mixture into greased pie dish pressing down to cover all areas evenly.
5) Bake in preheated oven for 14-17 minutes.
6) Let cool at least 20 minutes. Tastes great warm, room temp, or cold!

NOTE: I've made FRENCH TOAST from this the next day- just cut into slices, dip in beaten egg mixture and fry up in pan- YUM. I've done it with cinnamon, but I'm currently trying to stop all spices re: starch... Also using unsweetened coconut milk as syrup is good.. and I've even soaked the 'bread' in coconut milk and left it overnight and the next day it tastes like an amazing sponge cake:)


Oh! One more thing... I think when sugar gets cooked (with butter etc..?) it can be a problem for some.. (in this case the natural sugar coming from the fresh fruit).. if so, just don't add the fruit to the mixture to bake.. Instead maybe puree it in food processor into a jam like spread and put it on the bread pie once cooled and you're ready to eat..

Z's COCONUT MINT BERRY SMOOTHIE

Z's COCONUT MINT BERRY SMOOTHIE

Ingredients- 
4 oz (more or less) organic unfiltered apple juice 
4 oz (more or less) UNSWEETENED coconut milk (Coconut Dream is BEST! & comes in carton like soup broth)
1-2 Tablespoons raw coconut flour (unsweetened pure .. Coconut Secret is good)
1 cup unsweetened mixed frozen berries (blueberries, blackberries, & raspberries)
10-20 FRESH mint leaves (washed, no stems, torn in half)

1)  Put ALL ingredients in blender & mix well.  (Garnish with extra mint leaves if like.)  Enjoy!
