EASY HEALTHIER DESSERT OPTION. Sliced 6 green grannysmith
apples with slicer, then cut each one into a few thinner slices, place
in a glass pie pan. Pour moderate a amount of liquid coconut oil over
the apples gently moving them around to distribute oil more evenly.
Then sprinkle lots of PURE cinnamon (NOT cinnamon sugar:)) all over, and
gently move apples around to distribute more evenly. Lightly sprinkle
small amount of salt over apples and gently mix again.<span class="text_exposed_show">
Bake in preheated oven (375F) (can adjust higher or lower, sometimes
I'll cook at 400 for 15-20 min. and 300-350 for remainder of time).
Bake about 25-35 minutes (maybe longer or shorter, pending on oven,
temp, and if you like them much much softer cook longer).. And about half way through baking, take out and gently move/redistribute apples.<br /> After out of oven, mix the servings with Plain Unsweetened Nonfat Greek Yogurt, lots of it!!! SOOOOOOOOOOO DELICIOUS.</span><br />

INGREDIENTS:-8 large eggs. (use whole thing, minus the shell of course:)) <br />
-2 Tablespoons pure vanilla extract (NO CORN SYRUP additives in vanilla extract). I used 2 Tablespoons, but will try more next time as vanilla didn't quite come through. Still delicious on all the other notes.<br />
-1 teaspoon iodized sea salt.<br />
-1 teaspoon baking soda. no aluminum.<br />
-3 Tablespoons sour cream. (used Daisy regular.)<br />
-3 Tablespoons organic extra virgin coconut oil. cold pressed. unrefined. melted.<br />
-3 medium sized Cara Cara oranges. ripe. peel and pulverize. (used a ninja.. could just juice old school way and chop up remaining orange pieces to add so WHOLE ORANGES are used (but not the outer peel:)) <br />
-1/4 cup unsulphured blackstrap molasses.<br />
-1/3 cup PLUS 1/4 cup (OR 1 generous 1/2 cup) of Hershey's UNSWEETENED SPECIAL DARK cocoa powder (100% cacao). I had to check a few stores to find it, ended up finding it at Giant Eagle...- Really worth it, super glad I didn't just use regular. <br />
-3 cups of COOKED PLAIN unseasoned unsalted black beans. (I ended up making my own since the canned ones all had salt etc. added....) Figure out a way to get them mashed so they are like a paste, smooth as can be. I didn't have a food processor so I mashed the beans with large utensils and my hands to get it to the the right consistency (it kind of reminds me of thick mashed potatoes..)<br />

DIRECTIONS: <br />
Mix unsweetened cocoa powder, salt, and baking soda in one bowl. Mix eggs in another bowl and then mix in coconut oil and sour cream with the eggs. In a 3rd bowl, mix together the orange juice/pulp, vanilla extract, and unsulphured blackstrap molasses. In a fourth LARGE mixing bowl, add mashed beans and all the other ingredients from the other 3 bowls and mix together WELL. Once it's mixed enough, add to glass baking dishes. Anything will work. I put the batter in two glass casserole dishes (each about 12 inches X 8.5 inches). Can't remember if I greased them or not.... wouldn't hurt, just grease with coconut oil... Have oven preheated to 350 degrees Fahrenheit. Add your cake batter dishes and bake for about 17 to 22 minutes.... Keep an eye on them, ovens can vary. Remove and let cool. ENJOY! They are good fresh and warm, and also really tasty once they cool, and sit for awhile. I like leaving them out or putting them in the fridge is yummy too. And the flavor intensifies the next day, if they make it through the night! :) Be careful to not eat too much/too quick as the cocoa contains theobromine and caffeine. . . this cake seems to have a stimulant effect!<br />

-healthy oil of your choice for 'browning' the ground turkey breast. I prefer cold pressed extra virgin coconut oil, or organic red palm fruit oil, or extra virgin olive oil. </div>

-1 large bunch of <b>green onions</b>. (1-2 cups loose green onion chopped) (can also use the white parts too). I will buy organic if the price is reasonable. Sometimes you even get more with organic and you can see a visible difference in the quality of the produce.</div>
<div>
-1 plus 1/4 cup <b>sour cream</b>. (I use Daisy regular sour cream. . . so many other brands-healthy or not-use fillers- GROSS.)</div>

-3/4 cup (dry) <b>white rice</b>. (can use more or less). follow directions for cooking. usually cooks quicker and with a little less water if soaked for awhile. don't worry how rice consistency turns out. It gets patted down on top of the meat mixture and the tastes meld nicely.</div>

-2 tablespoons <b>unsalted butter</b>.</div>

-Add sour cream to meat mixture (can use more or less than what I listed. . . just taste to see to your liking. I've subbed out plain greek nonfat yogurt, still good but the sour cream makes it GREAT. . . daisy light sour cream might be okay too, you just lose a lot of that rich deep swedish stroganoff like flavor when you go low to no fat. . .whatever works best for you :). I like to make this on a day when I know I'm only going to have one real meal and keep it light the rest of the day. </div>

Let sit at room temperature for about 15 minutes or so...then place sheet in fridge and let solidify. It should take less than an hour. Remove and break apart the dangerous mass of goodness. Some teas that help me with pain, stiffness, digestion, nausea, cravings etc. include pure ginger tea, ginger/turmeric tea, pau d'arco tea, elderberry tea, & buffalo bone tea. Most of the teas I enjoy are caffeine free. I always read ingredient lists (eg: buffalo bone tea has lots of different herbs) and get familiar with things that may or may not agree with me. Something I learned is that it really does make a difference to take the time properly preparing your tea. Some need boiling water & steeped, covered for awhile, others have you boil the tea bags from the start & then simmer on stove low covered 20 minutes.. I just follow the directions. Also, some of the mesh tea strainers holes are too big, so be careful if buying one to handle loose tea.. 1) In medium bowl mix together 3 Tablespoons coconut flour, 3 Tablespoons golden flaxseed meal, & 3/4 cup unsweetened coconut shreds. <br />
2) Melt 2 Tablespoons extra virgin coconut oil. Add 1/2 teaspoon pure vanilla extract to oil.<br />
3) Add oil to mixture & combine. Stir very well. <br />
4) Add desired amount of dried cranberries (prefer dried cranberries sweetened with apple juice) to the mixture. One big handful? Mix well.<br />
5) Lay out piece of parchment paper on counter. (medium sized)<br />
6) With hands, firmly roll/mash mixture into cookie shapes. Helps to make it round in your hand first, then smash on the parchment paper. It's a little tricky, but just get them into fairly solid shapes on the parchment paper.<br />
7) Carefully lay parchment paper on large enough freezer safe plate for all the cookies.<br />
8) FREEZE the cookies for a couple hours, & keep stored in freezer. <br />
NOTE: THE COOKIES TASTE TOTALLY DIFFERENT ONCE FROZEN- they are not really good before they freeze for some reason. <br />

1) Mix 4 eggs, 1 teaspoon salt, & 1/2 cup of coconut flour together. Mix very well!<br />
2) Add one pound of ground WHITE TURKEY BREAST meat to mixture & mix very well!<br />
3) Form small 'meatballs' from the mixture.<br />
4) Cook the meatballs in 5 Tablespoons of extra virgin coconut oil. I use a large stainless steel pan. Gently stir them often, turning when necessary. (Turkey seems to crumble more than beef).. Cover the pan at intervals. Remove from heat once fully cooked. <br />
5) In large pan, heat a 27 oz can of PURE CHICKEN BROTH. (much better than turkey or beef broth).. It took me awhile to find literally pure chicken broth where chicken broth is the only ingredient listed. I found a can of Bowman & Landes at Mustard Seed Market. <br />
6) Add washed chopped green onions (about half a bunch) and the juice from one large organic lemon to the broth. Add himalayan sea salt to the broth to taste. I like a lot.<br />
7) Add meatballs to the soup and serve. 1) Dip ~4 thin sliced all natural chicken breasts (~ one pound) in bowl with one big egg that's been mixed.<br />
2) Moderately cover egg dipped chicken breasts in coconut flour on both sides- lil challenging as coconut flour absorbs so much liquid quickly, but should be fine.. if crumbles form just add those on top.<br />
3) Stir fry the chicken in olive oil in a pan until fully cooked. I use a sturdy metal spatula & chop the chicken into smaller bits as I'm cooking it. Mix in chopped green onions(1/2 bunch or more) when chicken close to being done.<br />
4) Add can of unsweetened coconut milk to pan. Add salt to taste. I prefer a lot in this. Remove from heat.<br />
5) Add lots of chopped celery to pan or wait and add after mixture cools if you want it crunchy.<br />
6) Now you can either eat it hot like soup, AND/OR you can wait and let it cool, refrigerate it, and then serve it on a bed of lettuce with diced strawberries and dried all natural blueberries (found some that are sweetened with apple juice or nothing added even better)..<br />

Preheat oven to 350 degrees F<br />
1) Brown 1/2 pound (or lil more) of grass fed beef & chopped green onions (about half a bunch or more) & remove from heat once fully cooked.<br />
2) Blend 3 eggs, 2 Tablespoons melted extra virgin coconut oil, generous 1/2 teaspoon salt in big bowl.<br />
3) Add 4 Tablespoons of coconut flour to bowl & MIX VERY WELL, so it's pretty smooth.<br />
4) Add 2-3 ripe chopped (gutted) tomatoes, a cup or two of cooked/boiled broccoli (drained well!) torn into small pieces, & the meat mixture to the big bowl.<br />
note: may substitute or omit tomato/broccoli..other ideas, cooked spinach, artichoke, fresh sage or oregano..)<br />
5) Mix all ingredients together well.<br />
6) Either grease cupcake pan (12 holders preferably) with ghee, or put 12 cupcake liners in cupcake holders.<br />
7) Spoon the mixture evenly into cupcake holders...I think they will be ~3/4 of way full on each one, maybe more?..<br />
8) Bake in oven for about 20 minutes at 350. If needs to go longer, lower to 300..<br />
9) Let cool completely, as this makes it much easier to peel the beefcakes without having to scrape off stuck parts..still peel slowly.. same if you just cooked directly in cupcake pan.. that way when try to cut/remove will be easier..<br />
10) Enjoy! <br />
Note: other ideas for the beefcakes include serving them with chopped lettuce/salad and lil mayo.. may want to add cheese, melted or not.. or maybe unsweetened coconut shreds..<br />

Ingredients-<br />
parchment paper (2 large pieces)<br />
3 large eggs<br />
3/4 cup raw coconut flour<br />
1/4 teaspoon salt<br />
1 generous Tablespoon extra virgin coconut oil (melted) (used Barlean's)<br />
1/8 teaspoon pure vanilla extract<br />

preheat oven to 325 degrees F<br />

</tbody></table>1) Whisk eggs in medium to large bowl. Add salt & melted oil. Mix well. <br />
2) Add pure vanilla extract. Mix well. Add coconut flour & mix VERY VERY well. <br />
3) Gently press together into one large piece of dough. Batter consistency may seem a bit like dry plato.<br />
4) Set first piece of parchment paper on secure surface. (I set mine on large wooden cutting board)<br />
5) Place dough on parchment paper, place second sheet of parchment paper on top of dough.<br />
6) Take rolling pin & roll over parchment paper/dough flattening it out evenly thin like crackers, alternating vertical & horizontal rolling. Check dough, fix any broken edges re-rolling if necessary.<br />
7) Remove top sheet parchment paper. Take knife or pizza roller & gently slice the dough into cracker squares. (I think I cut mine into 20 crackers..5 slices across, 4 slices down..)<br />
8) Place parchment paper that has crackers directly onto baking sheet & put in preheated oven. (325 F)<br />
9) Bake 7-9 minutes. Let cool about one hour. Gently break apart at lines into crackers. Put in freezer in container & wait a few hours. Enjoy! (Feel free to skip the freezing part, I just think they taste better this way- so good! and they don't truly freeze even if left in for days..& they keep longer too if you want to make big batches..)<br />

Note: These are a satisfying yummy snack, & also GREAT for a dessert- just add partially melted frozen or fresh fruit to bits of the crackers.. 2-3 peeled/gutted cucumbers (washed, cut in small pieces)<br />
7 or more stalks of celery (ends removed, washed, diced)<br />
1 lb or more natural chicken breasts, cut off fat (baked, then cut in small pieces)<br />
1-2 cans of unsweetened regular coconut milk<br />
half bunch (or more) of green onions (washed, diced)<br />
salt<br />
juice from 1-2 small to medium organic lemons<br />
<br />
1) Bake chicken in oven that's been preheated to 350 degrees F about 22 minutes (I use thin sliced chicken breasts)<br />
2) Heat coconut milk, lemon juice, green onions in pot or big stir fry pan on low to medium heat<br />
3) Add desired amount of salt (taste to see.. I use a lot:))<br />
4) Once soup part warm/hot remove from heat<br />
5) Add chopped up chicken, celery, and cucumber to the coconut milk mixture, see if needs more salt or just salt in serving bowl<br />
6) Enjoy! I like it warm room temp and cold..It gets thick once it's been cooled/in fridge...<br />
